Subject: [PATCH] fix: pin milvus minio image repository to ghcr mirror

docker.io/minio/minio no longer exists (archived upstream). Point the
milvus-helm minio subchart at the org ghcr mirror with the same pinned
tag; --repo retagging in DataMate-Deploy stays consistent.
