Show initials placeholder for People without a photo

Both the profile page (layouts/resources/single.html) and its card in
a resources list (layouts/resources/list.html) previously just
dropped the image slot entirely when a People entry had no `images`
front matter — collapsing the profile to full width and leaving a gap
in the Member Directory grid (e.g. Kedar Vaijanapurkar, whose LinkedIn
photo isn't publicly reachable).

Both now fall back to a square initials tile — same accent-glow style
as the existing no-logo fallback on other resource types — sized to
match the square crop every current People photo already renders at,
so a missing photo no longer looks like a layout gap.
