What changed in this PR
Updates the Azure SDK for Java’s Jackson compatibility testing matrix to reflect the revised support window while retaining key historical versions.
Changes:
- Replaces Jackson 2.19 and 2.20 validation with 2.21 and 2.22.
- Adds matching dependency overrides for the new versions.
- Removes unused Gson and older Jackson override presets.

Description
Drops Jackson 2.19 and 2.20 and adds 2.21 and 2.22 to Jackson version support validation matrix.
2.19 and 2.20 were dropped as 2.21 is a Jackson LTS version and 2.19 and 2.20 are no longer supported. 2.22 was added as it is the latest release version in support.
New support window going forward will be the key versions in support history for our code, 2.10 as the initial version of Jackson we used, 2.12 and 2.15 as they have specific checks for those versions in our code for runtime changes that have broken functionality for us, 2.18 and 2.21 as LTS versions, and whatever is the latest supported non-LTS versions. When a new version is released, it will be added to the support matrix and any versions that no longer are supported will be dropped, including LTS versions is they go out of support.
