feat: rename conway_fast/slow testnet variants to local_fast/slow#3511

The cardonnay testnet script variants were renamed from conway_fast/ conway_slow to local_fast/local_slow, decoupling the variant name from the node era. Update all references, including the dynamic era-based variant names that no longer make sense now that the era (conway) and the script variant are orthogonal.
Reference the cardonnay testnet script rename (local_fast/local_slow).
