refactor: switch docs icons from FA to Lucide

Description

Replace Font Awesome with Lucide across the Doxygen docs setup. This updates the Doxyfile aliases, header assets, custom icon initialization script, CSS, and both CMake and Read the Docs build steps so Lucide icons are bundled and rendered correctly.
