[BUG]: CI nightly runs timeouts

Describe the bug

Following issue #2745 down to its failing builds, most of them fail due to being cancelled at the 1 hour mark, e.g. these or these.

Overview here

A lot of the passing one take 50+ minutes, so these tests are not significant outliers.

I think we should just increase the timeout.

How to Reproduce

Wait for nightly to pop.

Expected behavior

All tests should succeed.
