Follow-up to #766.

What

#766 shipped Vanta as one plugin with three MCP servers (US, EU, AUS), so a user had to work out which connector to sign in to. This replaces them with a single vanta server at https://${VANTA_MCP_HOST}/mcp and a VANTA_MCP_HOST setup variable whose enum lists the three regional hosts:

Australia	mcp.aus.vanta.com

• Grok Bot (Sand desktop): the backend recognises this URL template and shows a native "Choose your data center" picker at sign-in, like Zoho CRM's. It then stores the pick and dials the regional host. The backend change is in everysphere PR #1163640 (https://origin.cursor.com/anysphere/everysphere/pull/1163640).
• Other clients: the region is a normal plugin setup field.

The variable is deliberately not required, because a Sand install saves no variables and the region is filled in at sign-in.

Changes

• mcp.json: three servers collapsed into one templated vanta server.
• plugin.json: adds the variables schema and bumps the version to 1.1.0.
• README.md and CHANGELOG.md are updated, including a note to keep the enum in sync with the backend registry.

Testing

• node scripts/validate-plugins.mjs passes.
