Reduce wit-test prop test samples #1787

src/hyperlight_host/tests/wit_test.rs is ran at every pr job, and is running default number of samples (256 per test I believe). We can probably reduce this number to get faster ci/test times without any major loss. This should still be able to capture any regressions as we run very often (every push on every pr)
