PHP 8.5 is the current release and
itkdev/php8.5-fpmhaslatestandalpinetags.Drupal 10 does not support PHP 8.5: the PHP requirements table lists 8.5 as "No" for 10.4–10.6, and 11.3 is the first release that supports it. So
drupal-10gets its own compose files on 8.4, likedrupal-8anddrupal-9.The Symfony 6.4 and 7.4 release pages do not say whether PHP 8.5 is supported; they only set a minimum of 8.1 and 8.2.
Existing projects keep their PHP version until they update their compose files.
