Follow-up to #124, which added symfony/ai-mate-composer-plugin without listing it in allow-plugins. The plugin runs mate discover after composer install and update.
Updates api-platform/core to 5.0.1, which bundles ReDoc 2.5.4 and fixes the ReDoc crash on OpenAPI 3.2 documents (api-platform/core#8569).
chore(deps): update composer dependencies
The mock identity provider covers local logins, so the login token authenticator comes off the firewall. The bundle still requires a cli_login_options route, now a fixed one instead of OIDC_CLI_LOGIN_ROUTE.

Vite builds the admin and api-docs entries through @symfony/reprise, and EasyAdmin loads the admin entry with addRepriseEntry(). AssetMapper only built the unused assets/app.js, but EasyAdmin rendered its import map on every admin page. The unused base.html.twig goes with it, and the admin stylesheet is now styles/admin.css.
