Description

Update the docker compose files from the itkdev-docker symfony-8 templates.

Changes:

• nginxinc/nginx-unprivileged to nginx/nginx-unprivileged in docker-compose.yml and docker-compose.server.yml.
• The /health/detail Traefik labels move to docker-compose.override.yml and docker-compose.server.override.yml, so the template files match the templates exactly.

Why: nginxinc/nginx-unprivileged is no longer maintained (itk-dev/devops_itkdev-docker#159).
