• Replaced docker-compose with docker compose

Most of this has since landed on develop (the docker-compose.yml rewrite and docker-compose.mac-nfs.yml deletion). I've carried the still-relevant cleanup forward, rebased on develop, in #12 — including the Taskfile fix (it still referenced the now-deleted docker-compose.mac-nfs.yml). The "more informative error" change was folded into #11. Suggest closing this in favour of #12.
