Description
The documentation says that if you don't set a IPExtractor, the LegacyIPExtractor will be used. But it was not being initialized by default when a new Echo instance is created.
Now it correctly set the LegacyIPExtractor as default IPExtractor and overrides it when called via NewWithConfig
