[dropshot_endpoint] reuse is_wildcard_path in endpoint validation - #1699

Make `EndpointMetadata::validate` consistent with `ChannelMetadata::validate` which already uses this helper. Also fix a typo in the ChannelMetadata doc comment. No functional changes.
