chore: configure Renovate like platformatic/platformatic - #5

Automerge minor/patch/pin/digest updates, group non-major updates into a single PR, enable lock file maintenance, and schedule runs overnight (Europe/Rome). Repo-specific ignoreDeps and the OpenTelemetry group from platformatic are omitted since they don't apply here.
