Bumps the version to 2.6.3 (Version: in the plugin header and Stable tag: in readme.txt), like the 2.6.2 release commit.

The 2.6.3 changelog already lists the merged changes:

• the tracker script loads async instead of defer (Load the tracker script async instead of deferred #331)
• Hummingbird compatibility (Exclude the plugin's scripts from Hummingbird's optimizations #332)
• the proxied tracker script follows the site after moving it to another host, domain or path (Keep the proxy's tracker script on the current host after moving the site #330)
• a missing local tracker script is loaded from Plausible and downloaded right away (Keep the proxy's tracker script on the current host after moving the site #330)

The Guzzle update (#328) isn't merged, so it's not part of this release.
