chore: move to Node 24.21.0

Problem

The repo pinned Node 24.19.0; 24.21.0 is the current Node 24 release. Dependabot does not bump .node-version, so the pin fell behind.

Solution

Bump the Node pin in .node-version to 24.21.0. engines ranges stay as they are.

Proof

pnpm run verify passed locally on Node 24.21.0.
