What changed in this PR
Removes a temporary Helm description override from ToolHive's upstream reference-generation configuration, relying on the description supplied by the Stacklok Enterprise chart source.
Changes:
- Removes the override for
guardrails.adapter.metrics.port. - Leaves generated references unchanged; regenerating v0.23.0 would require restoring the override.

Description
Remove the temporary
guardrails.adapter.metrics.portdescription override. The v0.23.0 references are published, and SEP main supplies the description in the chart source.Only the override configuration is removed; generated references are unchanged. Regenerating the immutable v0.23.0 source tag again would require restoring the override.
