The docs documented `smartEndpointingPlan.provider: "krisp"` as a working configuration, but the API's smartEndpointingPlan schema only accepts `vapi`, `livekit`, and `custom-endpointing-model` (verified against https://api.vapi.ai/api-json). Setting provider to `krisp` returns a 400. Removes the four passages presenting Krisp as a working provider and adds a schema-accurate configuration section for `custom-endpointing-model`, which was a valid enum value with no documented example anywhere on the page.
