Switches the Drupal and Symfony templates from the archived nginxinc/nginx-unprivileged image to nginx/nginx-unprivileged.

Changes

• templates/{drupal,drupal-8,drupal-9,symfony}/docker-compose.yml and docker-compose.server.yml: nginxinc/nginx-unprivileged:alpine → nginx/nginx-unprivileged:alpine

Why

Docker Hub marks nginxinc/nginx-unprivileged as archived: "This registry is no longer maintained, please use https://hub.docker.com/r/nginx/nginx-unprivileged/ instead." It stopped at nginx 1.31.7; the new image has 1.31.8.

Pulled both :alpine images and compared:

• Same user (101), exposed port (8080), entrypoint, docker-entrypoint.d scripts, PID path (/tmp/nginx.pid) and Alpine 3.24 base
• nginx -t passes on both for every template's .docker/templates and server nginx.conf
• The Symfony dev setup (no nginx.conf mount) starts and serves a static file

Existing projects keep running on the old image until they update their compose files.
